If you are visiting the Vatican eating in Borgo Pio is a must. It is a charming neighborhood filled with restaurants and stores selling religious items (rosaries, icons, prayer cards).
Here are the places I recommend in Borgo Pio:
Arlu- fancy but delicious

Al Passetto- a typical trattoria, great prices, delicious

Places to eat along the way to the metro stop- Ottaviano (Line A) and close to Piazza del Risorgimento: Due cento gradi: http://www.duecentogradi.it/ (Great for a quick panino) Trappiazzino: https://www.trapizzino.it/en/trapizzino/trapizzino-roma-piazza-risorgimento/ (great for a cold beer and a delicious Roman version of a panino) Amalfi pizzeria: https://www.amalfipizzerie.com/ (Good pizza)
Places to eat along the way to San Pietro Train Station:
La Vittoria: http://www.ristorantelavittoria.com/
Osteria dei Pontefici: https://www.osteriadeipontefici.it/en-gb/restaurant
And for a delicious panino- go here: Ristorante Wine Bar De' Penitenzieri (This is where I got my lunch most of the days!)
